Brief history of the Neapolitan Pizza
In 1889, King Umberto I of Italy and Queen Margherita spent few days in Naples. The queen was intrigued by pizza, which she had never tasted before. The most renowned pizzaiuolo (pizza maker) of the time was summoned to the Royal Palace. He owned a pizzeria located along “Salita S. Anna di Palazzo”, a short walk from Via Chiaia.
Don Raffaele and his wife, Rosa, prepared a pizza with mozzarella, tomato and basil – the colours of the Italian flag – which particularly delighted Queen Margherita. Don Raffaele dedicated this creation to the queen and named it “Pizza Margherita”. Since then, Pizza has become famous all over the world.
The main reason for this global success is its versatility: the basic recipe – simple, and made with easily available ingredients such as water, flour, tomato and mozzarella – allows for an infinite number of variations, adapting to different tastes and preferences, from the simplest to the most refined.
